In Ireland, deer are legally hunted in the months between  September and February. Venison meat is also available from a small number of deer farms. In my experience, it pays to know your source and to trust the judgement of an experienced hunter. Venison is an undervalued meat that can be truly delightful if properly hung and appropriately cooked by somebody who knows their stuff. I know my stuff.
