Before we start, though I am from an advertising background, this is not a paid post. Nor is it a sponsored post, I just want to say thanks to some nice people, for doing nice things. A friend of mine, Andrew Watchorn gifted me some coffee beans to try from Blue Butterfly Coffee. Andrew had developed a new corporate brand for Blue Butterfly (a great job) and his enthusiasm spilled over so much that he wanted me to try the product. It is lovely coffee. If you are buying coffee in a café, restaurant or hotel around Ireland, keep an eye out for the brand.

pigs-cheeks-sous-vide-3-of-5Do you see what I did in the headline? That subtle little play on words. A sort of culinary double entendre. The pig’s cheeks, cooked sous vide are cooked rare. Pig’s cheeks are not very easy to come by. Both play to add a bit of wit to the headline. You will just have to take my word for it, this is a rare treat. It is not very difficult to prepare any element of this dish but, you will need to have your timing chain well adjusted. 

Pork and bean stew (14 of 15)The expression ‘pork and beaner’ brings to mind a very grim time in modern history. Depression era USA had huge unemployment with transient populations doing what they could to keep body and soul together. Any of you young enough to wonder “What is the old git on about now?” should read some John Steinbeck to get an insight into that depressing world. Back then, a ‘Pork and Beaner” was a boxer, usually old, unskilled and destined for a painful bruising, who would fight for a plate of food. Often the staple, pork and beans.

Fruit Stuffed Pork Steak (19 of 20)

No, I have not become a vegetarian or a vegan or anything else beginning with ‘v’. No, my instincts about stuffed pork steak was honed and formed many years ago. Back in the day, pork steaks were stuffed with breadcrumbs, parsley and some scant seasoning. They would then be cremated “…to be sure the meat is cooked”. Dry pork steak stuffed with even dryer breadcrumbs makes me think of eating a piece of wet leather retrieved from a sawmill floor. Not that I have ever done such a thing. Though, I think you get my drift….
