Indian Lamb Shanks (24 of 24)I had a great post organised. What could be easier to write about? Indian style lamb shanks made from delicious Irish lamb.  Also, we had decided to make our own coconut milk from scratch. That had to be something most of you haven’t tried. This was going to be easy. So I concocted the recipe, organised the ingredients, cooked the meal and photographed the proceedings. Why then, did I find myself writing, scrapping and re-writing this post four times? That was until I saw Karen’s recipe for Lamb Shanks with Gremolata Crumbs. That fired and inspired me.

A huge pile of shredding if the truth were to be told. She managed to fill 37 sacks of shredded documents in one day. Given her great work rate and in an effort to keep the “How much ‘ya payin’ me?” conversation to a modest enough number, I brought her out for lunch at a local cafe. While we were waiting for our food, we were discussing family dinner for the following Sunday. A leg of Wicklow lamb had made its way into my possession and this was to be the base of the meal.

Pork steak with mango I was having a bad day. I started with no plan for the evening meal. I trawled the fridge, the fruit bowl and the vegetable basket. I had a pork steak. I had a big ripe mango. I had some chilis and I had some flat leaf parsley. The inventive side of me decided that I would cook Pork Steak with Mango, Chili and Parsley. Now all I had to do was to get something nice to go with it. That’s simple enough, surely?
