John Dory with fennel purée…to try this dish. It’s too good to keep to myself. In recent times, I have been making the case for keeping it simple. This has been more of a reflection of how I am trying to live my life (trying and failing) than for any higher gastronomic purpose. In an effort to prevent world shortage and escalating prices, I have tried to dissuade you from buying beef short ribs. You discouraged yourselves when it came to monkfish cheeks. So you might be surprised when I highly recommend you try something of truly spectacular quality and ease of preparation.

John Dory, Fettuccine, Pasta, Tomatos and BasilNo, I did not steal the fish. Though, the fish was a bit of a steal. John Dory fillets can be horrendously expensive. When one sees JD on restaurant menus it tends to be priced up there with the lobster and truffles. In my own experience, it tends also to be overcooked and pretty awful.

On my Saturday shopping trip, I saw that they were on special and I bought the John Dory thinking “These will be nice.”

They say that as one gets older, one tends to reminisce about better times in the years gone by. The summers were always sunnier, the fashions more fashionable and the food tastier.

Perhaps when I am at the stage where my last few friends will visit me to wheel my bath chair into the morning sun, I may begin to think this way. But, today, I still have my faculties (if not my follicles) so I know how much better things are now than back then.
