There are short ribs and then there are short ribs. One can’t blame the average butcher for trying to sell as much of the animal as possible. But, many go too far and end up harming their own businesses by selling bits of the animal that should really be put to other use. The humble short rib or Jacob’s Ladder is such a cut. The very best of the short ribs comes from high up the ribs, towards the front of the animal. As one goes lower and back, the ribs get thinner, the meat gets likewise and the connective tissue to meat ratio goes up. Having said all that, I was stunned by the quality of the short ribs I used for this recipe.

Beef short ribs (1 of 1)When I had my recent poor experience of trying to buy some lamb shanks, I thought it was an isolated incident. However, I was wrong. There is an oft used expression in marketing circles. That phrase is ‘Retail Theatre’. You know the sort of stuff; a rotund, jolly looking chap carrying freshly baked bread on a tray above his head or the vegetable aisles that look similar to a Shakespearian street scene. I am all in favour of a bit of the theatrical when I’m out and about buying the staples. But, when style pushes a knife through the arras and kills substance as effectively as Hamlet saw off Polonius, It’s time for me to take to the stage.

Beef Short RibsSorry about the long headline but I have been talking to my butcher. He tells me that beef short ribs or Jacob’s Ladder, as it is known in trendier spots, is becoming quite chique. If the normal rules of economics prevail, prices will rise as popularity increases. So, don’t cook it. We want to avoid inflation here in Ireland. Things are bad enough. It is not as nice as it looks so don’t cook it. Please.
