Lamb and Aubergine Curry ingredientsI like to have a plan, have all my ingredients lined up and get things done in pretty military fashion. At lest, that’s the aspiration. Sadly, often, the reality involves opening the press during the cooking, shouting some profanity at the empty space and then driving in a panic to the supermarket to get some essential spice or aromatic. This time, it needed to be different. I have been to cookery school (Yes, I have!). I have learned from the experts. I simply have to be able to prepare a Lamb and Aubergine Curry without the use of the car.

Indian style lamb shanks made from delicious Irish lamb.  Also, we had decided to make our own coconut milk from scratch. That had to be something most of you haven’t tried. This was going to be easy. So I concocted the recipe, organised the ingredients, cooked the meal and photographed the proceedings. Why then, did I find myself writing, scrapping and re-writing this post four times? That was until I saw Karen’s recipe for Lamb Shanks with Gremolata Crumbs. That fired and inspired me. 

Spiced leg of lambSeven years ago, I made a wrong decision. I set my relationship with the Wife back. So often, one does these things and the marriage never recovers. I take responsibility for my actions back then. I feel it’s time to make it up now. She deserves having things put right. My children deserve my putting the record straight. I deserve a future with a clearer conscience.
