Sous vide (French for “under vacuum”) is a really excellent way to prepare meat, fish or vegetables. There is even an obsession amongst some to get the perfect sous vide egg. It used to be the preserve of purists and professionals. But, no longer. Any interested home cook can produce unbelievable results with a €150 immersion circulator and some zip-loc bags.
