Irish mountain lamb has a flavour like no other. The Irish geography means many of the sheep reared in Ireland feed on a diet of herb enriched grass. Many live within sight of the sea and  their diet is enriched by salt carried on the coastal winds. We are blessed with delightful lamb and we try to bring out the very best in this glorious meat.
