Sous Vide Chicken

Somewhere buried in the cookery books that I rarely open these days lies a recipe for Vietnamese Roast Chicken. Somewhere on the blog, I cooked it. That was a few years ago. It is a worthy dish packed with delightful authentic Vietnamese ingredients that give a real flavour punch to the delicious chicken. I thought that I might try to get the same level of flavour and all round deliciousness cooking some free range chicken thighs in the sous vide. You can cook it in a traditional oven, under a grill or on a barbecue too and the instructions are below for that too. This is how I got on and I can only recommend to to you.

The Oxford English Dictionary describes an oxymoron as: “A figure of speech in which apparently contradictory terms appear in conjunction.”

Yet, here I am with as oxymoronic a dish as one could think possible. And to add to the culinary confusion, I froze it too. I suppose, to avoid accusations of culinary cultural appropriation, I should call this Oxymoronic Tandoori Style Chicken Sous Vide, Kindah. but, that’s to long for a headline and also “kinda” looks kinda Indian when it’s written down adjacent to Tandoori. But, I digress.

I was visiting a new cook-shop in a local village. The proprietor, a pleasant enough young man gave me a good run down on the pots, pans, dishes and bowls. We were talking about food when he said “You write that blog, don’t you.” Flattered, I admitted that I do. he then said, almost to himself “Yeah, the style is very traditional home cooked type of stuff.” I muttered something in reply and left the shop. I was slightly miffed by the thought of my cooking being very traditional. So, I had a look at the blog. There are more than 50 oriental dishes and over 40 sous vide dishes hanging around. So, if that’s traditional Irish cooking, here’s what might be thought of as traditional Irish sous vide chicken ramen.

They have the biggest democracy on the planet and they end up with the Donald as one of the two contenders for the most powerful position known to man (or to woman, if Hillary gets the gig). ‘The Donald’ has tried to attract specific groups by playing to their fears. This will prove to be a mistake. If I were to take a similar approach, we would build a wall in the Irish sea and I would call out some lovely Irish blogs (like Donna Hennessy’s A Cookbook Collection or Katia Valadeau’s Proper Food and say that you shouldn’t vote for them because they are run by women. Worse than that, Hennessy is the name of a drink and that Valadeau one is not even Irish. How can we let these people into an awards competition, let alone into the country? But, I’m not ‘The Donald’. Have a look at their blogs (if you must) and then vote for whoever you think is worthy. 

Chicken Breast Sous Vide (8 of 8)We are being threatened by summer here in Ireland. As with most Irish summers, there is a lot more threat than delivery. Yet, we live in hope. Each year, praying (those of us that still believe in our direct line to God) that the summer will live up to the imagined heights of the dull, uninspiring summers gone before.

You won’t find me on bended knee, praying for some decent weather. No, I am a man of action. If the Powers That Be (Me capitalising that bit is me hedging my bets) refuse to deliver on summer sun, I’m going to do what I can to make things around here as sunny as possible.
