Fancy a quick one?

“Fancy a quick one?” There was a time when one could ask that without drawing the ire and raising the hackles of half the planet. It’s an innocent question. If it has been misinterpreted in your cesspit of a mind, that really is your problem, not mine.  I’m talking about a Chicken and Broccoli Stir Fry. It’s really easy (You could misinterpret that too.) and quick. Try giving it a lash.

This is to satisfy two people, but feel free to invite your friends around if you think that might be more fun.

Ingredients

  • 2 chicken breasts
  • 300 grams or so of broccoli
  • 2 tablespoons of rice wine
  • 2 tablespoons of soy sauce
  • 3cm of ginger
  • 2 cloves of garlic
  • A pinch of chilli flakes
  • A little oil for frying

Slice the ginger and garlic into matchsticks. Trim the broccoli to remove the big trunk (no wonder they sell it by weight). Cut it into bite sized pieces. Steam or boil it until it gets a high green colour. Place the broccoli in an ice bath to stop it over-cooking.

If things are getting too steamy, an ice bath will sort it out.

Get your chopper out and slice the chicken into bite size pieces. Add the oil to a hot wok. Add the ginger and garlic. Stir vigorously, being sure to not let it burn. Add the chicken as soon as the aromas hit your nose. Stir like a (wo)man possessed.

This is one of the most sensuous parts of the preparation.

Add the rice wine when the chicken has changed colour to an even white. Flame off the alcohol, if you dare.

Things are getting pretty hot around here….

Add the soy sauce and reduce the liquid, stirring constantly. Add the broccoli and stir again to coat everything in sauce.

The slightly crunchy broccoli brings some balance to proceedings.

Sprinkle in the chilli flakes. Stir to combine.  Turn off the heat and serve generous portions over white rice.

This is worth getting a bit steamed up over.

This will leave both of you feeling sated and looking forward to having it again soon. So, if I happen to ask you if you fancy a quick one, be sure of the subject matter before taking offence. Mind you, if you hadn’t thought the suggestion outrageous…..

  • Myself, I’d be adding the thinly sliced stalks too. I mean, you’ve paid for the stuff, and it tastes pretty good, so why not? Either way, a satisfaction-guaranteed evening will be had by all, just to add to the potential misunderstanding…

      • I confess mine mostly go into the big pot of soup I make every week, but I do like them in a stir fry….

  • My mom called the peeled and sliced stalks “broccoli clouds” probably to get my dad to eat a vegetable. I love ’em — they’re actually pretty sweet.

    DH and I are up for a quickie tonight. Got the veg all prepped for my stir fry, although we’re using tofu (I know; perish the thought!). I’m just so impressed you can find reasonably-sized breasts — all the ones out here are “Hollywood” sized.

  • I’d make this with chicken thigh and include the broccoli stalks (peeled and sliced). Kees and I love quickies and this is a great one.

  • I’m so sorry you’re in southern France. Such a hardship. Love your stir fry – I taught the basics of stir fry to my daughters before they left home. It’s such a great, quick way to create a healthy, customized meal!
